Vine variety: Malvasia Nera di Brindisi.
Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium clay texture, shallow and with good skeletal soil.
Farming type: Espalier (4,500 vines per hectare).
Grape harvest: Second half of September.
Vinification: Thermo-controlled maceration for about 10 days, followed by alcoholic fermentation with selected yeasts.
Ageing: In French oak barriques for 6 months.
Tasting notes: Deep ruby red colour; complex aroma suggesting ripe red fruit and spices; a full-bodied wine with a pleasantly smooth impact and a long finish.
Best served with: Red meat, roasts with elaborate sauces and medium-aged cheese.
Serving temperature: 16-18 °C.
